Fable’s founding team wanted to find a way to make it easier for people to transition to plant-based foods, and spoke to several chefs who suggested using mushrooms as a base ingredient. Fable use shitake mushrooms and have developed a unique methodology that enables them to utilise the mushroom’s stem for a delicious meat alternative.

Farmless want to create a hopeful future by decoupling food production from arable land. They do this by cutting out the middle man of photosynthesis and replacing it with renewable energy to grow microbial protein with alcohol as a feedstock. Farmless can do this with 100-500x less land compared to animal proteins and 10-100x less land compared to plant proteins, independent from climate in a sustainable way.

Co-founded in 2021 with Norco Dairy Cooperative, Main Sequence Ventures and CSIRO, Australian-based Eden Brew is on a critical mission to put delicious animal-free dairy at the forefront of global food sustainability. Through a sustainable brewing technique called precision fermentation, Eden Brew uses yeast to produce dairy proteins, creating the base for a range of great tasting dairy products made lactose and cholesterol free. Through developing the world-first animal-free casein micelle, the key ingredient that enables animal-free milk to emulate the sensory and nutritional experience of cow’s milk in a way plant-based milks cannot, Eden Brew is readying to launch new consumer brands featuring ice cream, milk and more that the whole family will love.
